Why do you think it is a good idea to soak wilted lettuce in cool water before serving it?

Lettuce wilts because of loss of water. when you immerse wilted lettuce back into ice cold water for about 15-20 minutes, it regains its crispiness and freshness. it is then supposed to be served immediately.
